Paganini is a family-owned Irish company. Founded in 1990 by Tomas Murphy who began making ice cream using a classic Italian recipe on his dairy farm, Coolhull Farm, in Wexford.  Today the company still specialises in dairy and makes a full range of premium ice cream and frozen desserts using the raw milk from Coolhull Farm.  Bord Bia acknowledged the innovation of this dairy and bakery by presenting Paganini with the Innovation Award in the 2013 Bord Bia Food & Drink Awards.

Below is a flavour of what makes Paganini different.

– Raw milk and cream from the Murphy Family Farm in Coolhull, Wexford is a key input to all Paganini’s dairy desserts and ice-cream.
– We make all of our own Cream Cheese for the cheesecakes using the Milk from Coolhull Farm.

– Cheesecakes and all dairy ingredients are pasteurised onsite to ensure optimal food safety.
– The best available ingredients are used to compliment the best of Irish dairy ingredients including fresh whole eggs from Wexford, Bramley apples from Co. Armagh, Belgian chocolate and the highest quality Italian flavour pastes.
– Paganini make a number of dessert formats to suit a variety of applications and price points including round portioned cakes, individual desserts, portioned tray bakes, and mini dessert/assiettes.

New Product Development Team that is continually developing new products based on consumer insights and market trends.
– Paganini also has the FitFuel range; a ‘Food First’ range of protein enriched products developed for individuals struggling to eat enough protein in their daily diet to rebuild or maintain muscle strength.
